个人简介
唐鑫,博士,威尼斯432888can副研究员、硕士研究生导师,主要从事食品微生物功能发掘与利用相关研究,重点围绕食品微生物转化功能性代谢产物及其应用展开,研究方向包括食品微生物资源挖掘与应用、功能活性物质的合成途径及调控机制、食品微生物发酵活性物质的研究及产品开发、功能性食品和日化原料的研究与开发等。近年来主持或参与国家自然科学基金、国家重点研发计划、江苏省自然科学基金、中国博士后基金、江苏省博士后基金、威尼斯432888can自主科研计划、威尼斯432888can食品科学与技术国家重点实验室前沿交叉研究项目、企业横向项目等20余项,成果获教育部高等学校科学技术进步奖二等奖和中国商业联合会科学技术奖二等奖;以第一或者通讯作者在Trends in Food Science & Technology, Critical Reviews in Food Science and Nutrition, Journal of Agricultural and Food Chemistry,Food Chemistry,Food & Function,Antioxidants,Frontiers in Microbiology, Fungal Genetics and Biology, Process Biochemistry,微生物学报,食品与发酵工业,中国油脂等国内外主流学术期刊上发表论文30余篇;以主要发明人申请国际或国家发明专利50余项,获得授权专利20余项;参与专著《Lactic Acid Bacteria: Omics and Functional Evaluation》(Springer出版社)、《Lactic Acid Bacteria in Foodborne Hazards Reduction: Physiology to Practice》(Springer出版社)、《High Value Processing Technologies》(Nova Science出版社)、《乳酸菌科学与技术》(科学出版社)的编写工作。
